This single vineyard Viognier was de-stemmed and pressed to stainless steel tanks and a neutral oak barrel for fermentation and aging. After two months the barrel was blended into the tanks softening the wine ever so slightly. Fermented in tank very cold and slow over the course of 30 days, then racked off the heavy fermentation lees for aging.
Winemaker's Tasting Notes:
The wine is clear with a pale yellow hue, almost translucent. Aromatics begin with soft floral notes that open up to the smell of fresh cut flowers. On the palate the wine feels silky, it tastes of peach and honey with a long warm finish.
