Sourced from a single vineyard in the Suisun Valley, CA, this Chardonnay was gently pressed to stainless steel tanks for settling and then racked into neutral French Oak barrels for fermentation. Primary fermentation took place over the course of two weeks, and completed to dryness. The barrels were then topped up and kept on the lees for extended contact. Lees were stirred every two weeks for four months to build mouthfeel and complexity. Partial Malolactic Fermentation was allowed to take place, then stopped based on taste. Aged for 10 months in 10% new, 90% neutral french oak barrels and bottled via sterile filtration.
Winemaker's Tasting Notes:
This single vineyard Chardonnay offers a clean and creamy texture while alluding to the essence of fresh pear and butterscotch. Also shows notes of peach pit and honey butter, with lively acidity holding up the framework. Very pleasing now, yet can hold in cellar through 2025.
