A great expression of the variety, this single vineyard Sauvignon Blanc was gently whole cluster pressed to stainless steel tanks for fermentation and aging. Keeping oxygen to a minimum on this style of wine allows the fruit to pop and keep it lively. Fermented very cold and slow over the course of 30 days, then racked off the heavy fermentation lees for extended aging. No Malolactic Fermentation. Aged for 8 months prior to bottling via sterile filtration.
Winemaker's Tasting Notes:
A very inviting light yellow straw hue that shines vibrant out of the glass. Tropical notes of honeydew melon, cantaloupe, and lemongrass with a hint of freshly shaved nutmeg. Vibrant, bright, and clean flavors all the way through the long finish. Will cellar well for 10+ years.
